Tomatillo

Tomatillo Salsa Verde Recipe (Green Salsa)
1 1/2 lb (Appx. 14 medium) tomatillos, husked and rinsed
1/2 cup chopped white onion
1/2 cup loosely packed cilantro leaves
1 Tbsp fresh lime juice
1/4 teaspoon sugar
2 medium jalapeños
Place tomatillos in a saucepan and cover with cold water. Bring to a boil, reduce heat & cover. Simmer for 5 minutes. Drain well.
Using a slotted spoon, transfer tomatillos to a food processor. Add onions, cilantro, lime juice, sugar and jalapenos. Pulse until all ingredients are well blended. Transfer to bowl, chill for one hour and serve.
Makes appx. 3 cups.
Roasted Tomatillo Salsa Recipe (Roasted Green Salsa)
Yield: Makes about 3 cups
1 1/2 pounds fresh tomatillos, husked and rinsed
3 fresh jalapenos
3 garlic cloves, unpeeled
1/2 cup fresh cilantro
1 large onion, coarsely chopped
2 teaspoons coarse salt
Preheat broiler.
Place tomatillos, jalapenos, and garlic cloves on a broiler pan & broil 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred, about 12-15 minutes.
Peel garlic and pull off tops of jalapenos. Purée all ingredients in a food processor until well blended.
Can be made 1 day ahead and chilled, covered.
Tomatillo Avocado Salsa Recipe
1 lb Tomatillos (appx. 13-15), husked, rinsed well & cut in half
1 Avocado, peeled & pitted
1 Serrano or jalapeno, cut in half
1 Cup loosely packed fresh cilantro leaves
2 Tbsp. fresh lime juice
1 tsp. Salt
Place all ingredients in a food processor and puree.
Makes appx. 2 Cups
