Add the smoky flavor of chipotle to your salsas
Chipotle Tomato Salsa Recipe
3 medium tomatoes
1/2 large white onion, cut into 4 wedges
3 garlic cloves
1 tablespoon canned chipotle peppers in adobo sauce, chopped
1/4 cup fresh cilantro, finely chopped
½ tsp. salt
Heat a dry, heavy nonreactive skillet, such as cast iron, over medium heat until hot (do not use non-stick cookware).Place tomatoes, onion, and garlic in hot pan and allow to blacken in spots, turning when needed, approximately 10 to 15 minutes. With tongs, transfer the vegetables to a food processor; add peppers and salt & pulse to puree. Return salsa to skillet and simmer until slightly thickened, 15 to 20 minutes. Allow to cool. Stir in cilantro and serve.

Easy Chipotle Salsa

- 7 large Roma tomatoes, deseeded and chopped
- 1 clove garlic, minced
- 1/2 cup chopped white onion
- 3/4 cup fresh cilantro, roughly chopped
- 2 tablespoons fresh lime juice
- 1 7oz can chipotle chilies in adobo sauce, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon kosher salt
In a medium bowl, combine all the ingredients and mix well. For best flavor, let salsa sit at room temperature 30 minutes before serving.
