Black Bean Salsa Recipe
2 (15-ounce) cans black beans, rinsed and drained
1 (16-ounce) package frozen whole kernel corn, thawed
3 large tomatoes, seeded and diced
1 large avocado, peeled and diced
1/3 cup red onion, diced
½ cup fresh cilantro leaves, chopped
2 tablespoons lime juice
1 tablespoon red wine vinegar
Salt and pepper
Place all ingredients in a large bowl & mix well. Cover and chill for 1 hour. Great with tortilla chips or as a side to grilled chicken breast.

Fiesta Salsa Recipe with Black Beans & Corn
1 (15 ounce) can yellow corn, drained
1 (15 ounce) can white corn, drained
2 (15 ounce) cans black beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, drained
1 cup finely chopped cilantro
3 green onions, finely sliced
1 small red onion, finely chopped
1 red bell pepper, seeded and chopped
3 Cloves garlic, minced
1/4 cup freshly squeezed lime juice
2 Tablespoons cider vinegar
1 teaspoon ground cumin
1 avocado - peeled, pitted, and diced
¼ Cup Olive Oil
Stir corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic together in a large bowl. Add olive oil, lime juice, cider vinegar & cumin and mix well. Gently add diced avocado.
