Avocado Serrano Salsa Recipe
Ingredients

2 Large avocados, peeled, pitted and chopped
¼ Cup fresh lime juice
1 Roma tomato, seeded & diced
3 Tbsp. minced red onion
1 Tbsp. minced Serrano pepper, with seeds
2 tsp. minced fresh cilantro
½ tsp. salt

Directions

Carefully fold all the ingredients together in a mixing bowl. If making a few hours ahead, place the avocado pit in with the salsa to help prevent the avocado from turning brown.

Makes appx. 2 cups

Guacamole Recipe

Ingredients

3 ripe avocados, halved, seeded and peeled
1 Tbsp. fresh lime juice
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
½ cup white onion, chopped
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Directions

Place avocado and lime juice in a large bowl and stir to coat well. Add the salt, cumin, and cayenne; mash together well, using a potato masher or fork. Mix in onions, tomatoes, cilantro, and garlic. For best flavor, allow to sit at room temperature at least ½ hour before serving. To prevent browning, place the pit of an avocado directly into the dip, removing before serving.

Tomatillo Avocado Salsa Recipe

Tomatillo Avocado Salsa Recipe
Ingredients

1 lb Tomatillos (appx. 13-15), husked, rinsed well & cut in half
1 Avocado, peeled & pitted
1 Serrano or jalapeno, cut in half
1 Cup loosely packed fresh cilantro leaves
2 Tbsp. fresh lime juice
1 tsp. Salt

Directions

Place all ingredients in a food processor and puree.

Makes appx. 2 Cups

Ingredients

1 (16 ounce) package frozen corn kernels, thawed and drained well
1 red bell pepper, chopped
1/2 medium red onion, chopped
3 cloves garlic, minced
1 large jalapeño, stemmed, seeded and chopped
1 can (15 ounce) black beans, rinsed and drained well
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
3 tablespoons cider vinegar
1/2 teaspoon kosher salt
5 avocados, peeled, pitted and chopped into large chunks

 

Directions

In a large bowl, mix together corn, red pepper, onion, garlic, jalapeño, and black beans
Add olive oil, lemon juice, vinegar and salt and stir well.
Add chopped avocados, turning mixture gently to coat avocados

Chill for 1 hour before serving.
