Chicken and White Bean Chili
Ingredients:
- 1/4 cup olive oil
- 1/2 medium onion, chopped
- 1 large green bell pepper, stem and seeds removed, chopped
- 5 garlic cloves, minced
- 1 jalapeno, stem removed and finely chopped
- 2 15 ounce cans diced tomatoes, not drained
- 2 14-15 ounce cans Great Northern beans, not drained
- 1 1/4 lb chicken, cooked and shredded
- 2 tablespoons tomato paste
- 1 1/2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Directions:
Heat oil in a large pot over medium-high heat. Add onion, bell pepper, and garlic and sauté until vegetables begin to soften, about 5 minutes. Add jalapeno, un-drained tomatoes & un-drained beans. Mix in cooked chicken, tomato paste, chili powder, cumin, salt and pepper. Simmer about 30 minutes and serve.
